The Wine
Aussie critic James Halliday calls Ed Carr "a quietly spoken genius. He is by some considerable distance Australia’s greatest sparkling winemaker." He has won over 100 Trophies and 21 of those for Best Sparkling Wine. In 2018 was awarded a Lifetime Achievement Award at the Champagne and Sparkling Wine Championships – the only non-Champenois to receive it. He's a firm believer in the quality of cool climate Tasmanian grapes and was the driving force behind Arras using pure Tasmanian fruit for its Prestige Cuvée. The grapes are sourced from six different regions on the island, each bringing a different nuance to the wine. Three years ageing on its lees and six months in bottle ensures a fine, complex fizz. No rush for this. Chill and enjoy.
