You may already be a fan of the elegant charms of Domaine de Paris pink. This, however, is the flagship release using grapes from an exciting new subregion – the latest in just five declared as superior. The vineyards all lie at about 800m altitude, around the towering Massif des Maures. An ancient chapel perches there, La Notre Dame des Anges, which served as a refuge for brave pilgrims on their journey. Michel Brun makes our fine Domaine de Paris, but his son, Fabrice – a doctor-turned-winemaker, has stepped in to make this superb rosé of the angels. Grenache from old vines, with a splash of Cinsault, this is a pale-hued pink, with pretty red fruit, stony freshness and a savoury finish. Delightful solo; versatile with lighter dishes.
