Domaine Servin is a fabulous, seventh generation family cellar, less well known than it should be. That’s despite Wine Advocate marking them out as deserving a higher reputation. The Servins can boast over 200 years of experience in Chablis. Now, added to that is the skill of François Servin’s son-in-law, Australian winemaker Marc Cameron. Decanter journalist Andrew Jefford describes the wines of this estate as having “great elegance, purity and length” and this Grand Cru is of the finest order. From the northwest edge of the Grand Cru hill, its wines are less austere. Still, this wine will improve with age. If you can’t wait, make sure you let the wine breathe or pour into large glasses. Serve with your best seafood or poultry dishes.
