Domaine Michel Thomas is a small, family run estate of 17 hectares in the Sancerre’s Sury en Vaux. The wines consistently out-perform their peers and have won over 45 awards in the last decade alone. The Thomas family’s finest vineyards are those planted on superb silex soils. They also boast a perfect, sunny aspect and are littered with pieces of flint, said to imbue the wine with hallmark ‘pierre à fusil’ aromas. Meticulous grape selection and traditional winemaking have produced a ripe yet crisp, mineral style with beguiling complexity. From a top vintage, this wine was bottled unfiltered for extra flavour, so a light, natural deposit may appear in the bottle. Simply let it stand for a few hours, then enjoy with seafood or goat’s cheese.
