Although the village of Chablis is tiny, its influence and fame is anything but. So outstanding are the flavours of its Chardonnay wines that it has inspired imitations (which inevitably are never as fine) as far afield as California and Australia. The long established Dampt estate makes textbook Chablis, but it’s this wine, from vineyards designated Petit Chablis, that offers the smartest entrée to their range. By employing the same exacting standards of vineyard management as they do for their top wines, the Dampt brothers achieve surprisingly concentrated flavours, classic summer hay aromas, and that all important streak of bone dry minerality. Enjoy this fine Petit Chablis with freshly shucked oysters, wild salmon or grilled Dover sole.
