Based in the heart of Gevrey-Chambertin, this estate is run by Florence and her Champenois husband, Simon. They worked at Florence's family domaine for 10 years, before deciding to start a venture of their own. Certified organic and shortly to be biodynamic too - these are a clear indication of the painstaking care they adopt in the vineyards and the winery. The skilled husband-and-wife team favour the use of whole bunch fermentation (50% here), adapting the winemaking to suit the needs of each vat. Using grapes from a 60-year-old vineyard, adjacent to the winery, with minimal pigeage (plunge down of the grape skins), this is an elegant, expressive red, aged 16-18 months in part new oak. Open early and decant or, ideally, cellar.
