Back in the day, when more traditional wine merchants ventured little further than the smarter, historic bodegas of Priorat and Rioja, Tony ventured south along the mighty Ebro river and into Cariñena. Here the sun beats down like an iron bar, the vines are ancient, gnarled and twisted, the soils red and rocky – soaking up the heat and ripening the grapes at night.

This wild west-like, sleepy backwater is actually one of the oldest appellations in Europe, having been awarded D.O. status in 1932. And a real treasure trove. Decanter magazine rates Cariñena as “one of the best sources of good value red wine in Spain, if not the world”.

Winemaking dates back to Roman times and it is a collective affair. No manicured vineyards or grand châteaux here. Small growers pool their resources and make the best wines they can at the local co-operatives that dot the landscape.

San Valero is the oldest and best of these co-operatives. It is here that Tony met award-winning winemaker Javier Domecq and El Bombero was born – named after the local firestation. Take the very best, silky Tempranillo from the highest vineyards for wild strawberry finesse and supple tannins. Then add bright juicy Garnacha from the oldest vines. Coax every drop of potent cherry, red berry, liquorice and spice from their flavour-packed grapes. Lastly, a dash of super ripe Cabernet Sauvignon for extra concentration of fruit. Six months in oak adds sweetness, hints of chocolate and more spice.
